1/2 c. Parmesan cheese, divided
2 Tbl. low-fat mayo
2 Tbl. Greek-style yogurt or sour cream
2 Tbl. melted butter
1 small lemon (about 2 Tbl. juice), juice and zest of
1/2 tsp. dried basil
1/2 tsp. dried tarragon (substituted dill)
1/4 tsp. onion powder
4 (6 or 8 oz.) tilapia fillets
salt & pepper to taste
1. Combine 1/4 c. Parmesan cheese with remaining ingredients (except fish). Coat fillets with mixture and place in baking dish or shallow platter and let marinate for 15 - 20 minutes.
2. Preheat broiler. Once fish has marinated, transfer to foiled-lined pan. Spoon a few Tbl. of marinade on top and sprinkle with remaining Parmesan.
3. Broil until topping is lightly browned and fish flakes easily with a fork, about 5 - 8 minutes.
